As the name of the recipe suggests, egg salads are distinguished by a high content of boiled eggs. Eggs can be combined with many foods, so they can be combined with anything. This minimalist recipe uses only green onion feathers. However, you can supplement it with chunks of meat or meat products. Slices of fish and seafood are also great. Vegetables, mushrooms or fruits will not be superfluous.
Salad is dressed with mayonnaise. But here, too, there is a large selection of sauces. If you do not like or do not eat fatty foods, then you can use a mixture of sour cream with mayonnaise and herbs. Or even season with low-fat yogurt with spices. You can serve such a salad simply by putting it in portioned wide plates or salad bowls, it is also beautifully served in glass transparent glasses or glasses, but it will be much more interesting to put it in baskets of shortcrust or choux pastry.

How to make a simple egg and onion salad
1. Wash green onions and pat dry with a paper towel. Then chop it finely with a sharp knife and put it in a salad bowl.
2. Boil the eggs until steep. To do this, dip them into a saucepan with cold water, add a pinch of salt and, after boiling, cook for 8-10 minutes. If the eggs are digested, the yolks will turn cyanotic, and the proteins will become rubbery. After boiling, place the eggs in a container of ice water to cool well. Then peel them and cut them into cubes. Send to a bowl of onions.
3. Pour mayonnaise into the salad and season with salt. Do not pour too much mayonnaise at once, so that the salad does not turn out to be watery.
4. Stir the food to distribute it evenly and taste the salad, add salt as needed and adjust the flavor to the desired taste.
5. Cool the prepared salad and serve with any piece of meat or fish steak, a side dish of porridge, spaghetti or rice.
