I offer a simple recipe for making a mushroom kebab at home. It is prepared elementary, but it turns out to be simply excellent and tasty. The taste of baked mushrooms is perfectly set off by ginger and paprika. Mayonnaise, on the other hand, acts as a conductor of the taste of these seasonings and provides the mushrooms with an appetizing blush. Marinating mushroom kebabs, unlike meat skewers, can be very short. Only 15 minutes will be enough, and they will turn out to be quite tender. Such an appetizer will suit a glass of beer, sparkling wine or an interesting side dish. But also such kebabs can be served on their own with some kind of sauce. In addition, baked champignons can be used as the main ingredient for preparing all kinds of salads, both vegetable and meat. Such a mushroom appetizer will be an excellent treat, both with the family and in a large company at the festive table.

It is worth noting that according to this recipe, you can cook mushroom kebabs outdoors on the grill, and use not only champignons, but also oyster mushrooms or aspen mushrooms. Well, if you understand forest gifts, then you can safely collect russula, boletus and chanterelles.

Selection of champignons

Choose only fresh champignons. Of course, mushrooms will be suitable after a couple of days, but the taste and benefits deteriorate over time, especially if stored improperly.

When buying mushrooms, look at their color. The hat should be white, matte or slightly brown. Stale mushrooms can be found out about the violation of the integrity of the film near the joints of the cap and stem, or by dark spots located on the caps. The mushroom smell is characteristic only of fresh champignons.

After purchase, you can store them for only 2 days, without washing and wrapping them in paper. And they should be washed and cleaned immediately before cooking.

  • Ground ginger - 1/3 tsp
  • Ground sweet paprika - 1/2 tsp
  • Salt - 0.5 tsp or to taste
  • Mayonnaise - 100 g
  • Ground black pepper - 0.5 tsp or to taste

1. Wash fresh mushrooms and pat dry with a paper towel. Place them in a bowl and add salt, ground paprika, ginger and mayonnaise.

2. Mix them well, wrap with cling film and leave to infuse for 15–20 minutes.

3. In the meantime, prepare your wooden skewers. Soak them in water for 15 minutes. This is necessary so that they do not burn during baking.

4. Then string the mushrooms onto the skewers one by one. Place the kebabs on a baking sheet of a suitable size, namely, the mushrooms should not touch the bottom of the baking sheet, so that they can cook evenly with hot air on all sides.
