1. It is best to harvest wild garlic immediately after purchase. Put the leaves in small portions in a colander and rinse thoroughly under running water, removing damaged areas.
2. Then let the water drain, place the plant in a thin layer on a clean kitchen towel and dry well. There should be no excess moisture during freezing. Since the wild garlic will stick during prolonged drying, so dry the leaves with a towel or napkin.
3. Cut the wild garlic into small pieces or any size you like.
4. Divide and place in a plastic freezer bag.
