Many people with a sweet tooth adore poppy baked goods for their unique aroma. With poppy filling, you can make buns, rolls, delicate biscuits, or you can please with quick and simple, at the same time delicious pastries - cottage cheese muffins. This is a heavy, fine-pored crumb, a light, slightly perceptible creamy aroma of cottage cheese, a ruddy top with a characteristic crack, which is generously sprinkled with powdered sugar.
For their preparation, the main thing is the correct cottage cheese, which must certainly be fat, because the dough contains very little fat. Ideally, if the cottage cheese is fatty, rustic, sweet baby curds are also suitable. The recipe itself is basic, since on its basis you can vary the recipe to your liking. For example, many chefs, trying to diversify recipes, add raisins soaked in alcohol, dried fruits, lemon zest, chocolate chips, chopped nuts, and other products. This will give the cupcakes a whole new flavor and also make them taste unique.
An important point in the recipe is to remove all the ingredients from the refrigerator before cooking so that they acquire the same room temperature. Only then will the dough be as homogeneous as possible, because it cannot be kneaded for a long time. These muffins will be a great breakfast for all family members, and especially for little fussy people who do not like to eat pure cottage cheese. Such curd pastries are stored perfectly, they remain soft and fresh much longer, especially in comparison with the classic English cake.

Ingredients:
- Homemade fat cottage cheese - 500 g
- Flour - 250 g
- Egg - 1 pc.
- Butter - 50 g
- Poppy - 4 tablespoons
- Sugar - 3 tablespoons or to taste
- Salt - a pinch
- Soda - 1 tsp
- Vegetable oil - for lubricating molds

1. Place the curd in a deep container suitable for kneading the dough. If you have a little extra time, then whisk the cottage cheese with a blender or twist it through a meat grinder.
2. Pour flour to the curd. By the way, you can use not only wheat flour, but also buckwheat, oatmeal or corn flour.
3. Beat an egg to the food, add sugar, a pinch of salt, soda and add butter.
4. Add poppy seeds. You do not need to soak it first. Although, if you want, to improve the taste, you can grind it in a mortar with sugar or honey.
5. Knead the dough well so that all food is evenly distributed.
6. Grease silicone muffins for muffins with vegetable oil, especially if you use them iron and fill 2/3 full with dough. By the way, I didn't have enough molds for all the dough, so I decided to make cottage cheese pies by simply putting the dough on a baking sheet. But, alas, they did not work out, tk. the cottage cheese is too fat, and the dough cannot keep the shape, from which all the baked goods spread out on the baking sheet. Therefore, do not even try to do such experiments.
7. Heat the oven to 180 degrees and let the muffins bake for 30-35 minutes. Let the finished baked goods cool, sprinkle with powdered sugar, or pour over with chocolate icing and serve with freshly brewed tea.
