- Cottage cheese - 250 g
- Salt - a pinch
- Carrots - 1 pc.
- Vegetable oil - for greasing the baking sheet
- Dried ground orange peel - 1 tsp
- Eggs - 1 pc.
- Semolina - 3 tablespoons
- Sugar - 50 g or to taste
Step by step preparation of carrot cakes with cottage cheese and semolina in the oven, recipe with photo:
1. Peel the carrots in advance, for example, in the evening. Boil or bake in the oven until soft. Then, using a blender or pusher, chop the carrots to a puree consistency and chill well.
2. Pour the curd into a mixing bowl.
3. Then add semolina, a pinch of salt and sugar.
4. Add carrot puree.
5. Sprinkle in dried orange zest. If there is fresh fruit, grate and add fresh zest to the dough. Orange can be substituted for lemon.
6. Stir the dough and add the eggs. Add dried fruits to the dough if desired: dried apricots or raisins. It will turn out to be original and tasty! Mix everything again and leave the dough for 15-30 minutes so that the semolina swells, the dough increases in volume and becomes denser. 7. With wet hands, so that the dough does not stick to your hands, form small round cheesecakes with a diameter of about 5 cm and a height of 1-1.5 cm. Put carrot cakes with cottage cheese and semolina on a baking sheet greased with vegetable oil or covered with parchment paper, and send to bake in oven at 180 degrees for half an hour.
