Batter is an invention of French chefs, but today it has firmly entered the cuisine of many countries. Usually in batter, we are used to cooking meat, fish, squid, shrimp. And not many people know that you can cook vegetables and fruits in this way. For example, cauliflower, zucchini, eggplant, and Bulgarian pepper are delicious in batter. And for dessert, pears, apples, peaches, apricots, plums, etc. are cooked in batter. In addition, fruits can be either fresh or canned. After cooking, they remain juicy inside, while acquiring a crispy, tender crust. In this recipe, I'm talking about the process of making plums in batter.
The batter can be made on a variety of liquid bases. There are many different recipes for it: milk, mineral water, beer, kefir, water, strong drinks … Also different flours are used: wheat, rye, rice, corn, potato starch. To improve the taste of the dough, all kinds of additives are added: chopped greens for vegetables, and sesame, vanilla, cinnamon for fruits. Today's batter recipe is based on yogurt. It is suitable not only for fruits, but also for absolutely all products. The only difference is that you need to put sugar for fruits, and salt for vegetables and meat. This batter adheres well to food.

Ingredients:
- Flour - 150 g
- Sugar - 3 tablespoons or to taste
- Eggs - 1 pc.
- Plums - 10-15 berries, depending on size
- Sour milk - 100 ml
- Vegetable oil - 2 tablespoons
Step by step preparation of plums in batter, recipe with photo:
1. Combine yogurt, vegetable oil, egg and sugar in a deep container. Whisk the liquid components until smooth.
2. Add flour to the food, sift through a fine sieve. So it will be enriched with oxygen and the batter will be more airy and tender.
3. Knead the dough with a whisk or blender until smooth so that there are no lumps. The texture of the dough should be slightly thicker than the pancake dough. But if you scoop the dough with a spoon, then it should pour out of it. If your dough is thicker, dilute it with curdled milk, if it is very rare, add flour.
4. Wash the plums and dry them with a paper towel. Cut the berries in half and remove the seeds.
5. Dip the plums a little into the dough.
6. Stir so that they are all submerged in the batter.
7. Heat a frying pan with a thin layer of vegetable oil and put plums with a tablespoon.
8. Fry them over medium heat until golden brown and turn over to the other side, where cook until tender and golden. Serve prepared plums in batter deliciously with a scoop of ice cream, whipped cream, chocolate paste or just with a glass of milk or a cup of tea.
