To make jam, you need to sort out the berries, removing the tails and limp or spoiled fruits. We wash the dogwood under running cold water and pour 300 ml of clean water. We boil for 10 minutes.
An important step is to remove the pits and skin. To do this, take a metal sieve and grind the still hot berries with a tablespoon. This will make the dogwood puree smooth and tender.
We return the dogwood to a small fire and begin to boil.
Immediately add sugar to the warm cornel puree, stir to dissolve the crystals. Boil on low heat for 20-25 minutes. In this case, the volume of jam should be reduced by almost half, and the mass itself should become thick and viscous.
We sterilize small jars. Before putting dogwood jam in them, make sure that the container is dry, without droplets of water.
We roll up or twist the cans and wrap them up, letting them cool gradually. Do not turn the sealed jam over.
