The second important ingredient in this dish is onions. It is subject to special processing, which allows you to remove bitterness from it, make it sweeter, slightly suppress the aroma and preserve the maximum of useful substances.   • Pickled cucumbers - 500 g
  • Onions - 1 pc.
  • Water - 100 ml
  • Sugar - 1 tablespoon
  • Vinegar - 1 tablespoon
  • Vegetable oil - 3 tablespoons

Step-by-step preparation of pickled cucumber and onion salad

1. From the surface of the onion, remove the outer dry scales, cut the inner snow-white filmy pulp into strips or half rings. Before mixing this ingredient with cucumbers, it must be processed. To do this, pour the chopped vegetable with boiling water, add sugar and vinegar, mix. In this form, you need to leave for 15 minutes.

2. While the onion is pickled, chop the cucumbers. Their shape can be any - flat circles or thin sticks. It is not necessary to grind the product thoroughly, so that the salad does not turn into a mass for the sauce.

3. Drain the marinade from the onion mass, place it on a strainer and rinse once with cold water. Add the onion to the salted cucumbers of the salad after all the excess moisture has drained from it.

4. We fill the cucumber-onion mass with vegetable oil, although it can also be replaced with olive oil, in order to give the finished dish a bright aroma and saturate it with a large amount of useful substances. Add chopped fresh parsley if desired and mix thoroughly. Leave for 5-10 minutes to mix aromas and flavors and then spread on a suitable dish.
