This dish is one of the variations of the well-known and beloved Olivier salad. A simple, but very satisfying and tasty Stolichny salad diversifies both the daily diet and decorates the festive table. To prepare it, boiled vegetables, a meat component (chicken breast or doctor's sausage), fresh cucumbers (pickled in the original recipe) and eggs are required. Mayonnaise is usually taken as a dressing, preferably homemade. To make it, you can find the recipe on the pages of the site. But a sauce based on sour cream and mayonnaise in equal proportions is also good for this salad.
If you are a lover of a hearty dinner, then take this salad into service. In addition to being tasty, satisfying and nutritious, you can also experiment with it. For example, use lean pork, beef tongue, and even red fish. Meatless snacks can also be prepared by purchasing mushrooms, such as champignons, which are pre-fried until golden brown or marinated. The taste is even softer and lighter. Green celery will refresh the salad, and capers and olives will add sourness. Some recipes involve the addition of finely chopped onions, while others do not. However, the combination of boiled, pickled, salted and fresh vegetables allows every housewife to find the most optimal recipe for herself.

Ingredients:
- Potatoes - 2 pcs.
- Eggs - 3 pcs.
- Green onions - bunch
- Mayonnaise - for dressing
- Salt - 0.5 tsp or to taste
- Milk sausage - 300 g
- Green peas - 200 g
- Carrots - 2 pcs.
- Fresh cucumbers - 1 pc.
Step-by-step preparation of Stolichny salad from fresh cucumbers with peas, recipe with photo:
1. Cut the sausage into cubes with sides no more than 1 cm. The optimal size is 7-8 mm. In the future, when chopping products for salad, keep the same proportion.
2. Peel and slice the eggs. Boil them beforehand and refrigerate. To do this, put them in cold water, boil and simmer for 8 minutes. Then transfer to ice water.
3. Peel the boiled potatoes in their uniforms and also cut them into cubes. Boil it in lightly salted water. Do not overcook, otherwise it will be soft and fall into pieces, which will not get evenly cut cubes.
4. With carrots, do exactly the same as with potatoes: boil in uniforms, cool, peel and cut.
5. Wash the cucumbers and dry with a paper towel. Then chop like all the previous vegetables.
6. Wash the green onion feathers, dry and chop finely.
7. Place all the chopped foods in a bowl and add the green peas. Season with a pinch of salt and top with mayonnaise.
8. Stir the salad and serve. Chill it in the refrigerator for 20-30 minutes before serving.
