You can get serum from watery cottage cheese by putting it in cheesecloth and wringing it out with your hands. You can also make cottage cheese from milk, then there will be a lot of whey, which you store in the refrigerator and use as needed. By the way, it can be frozen and thawed as needed. Ingredients:
- Serum - 250 ml
- Flour - 200 g
- Eggs - 1 pc.
- Vegetable oil - for frying
- Dry yeast - 1 tsp
- Sugar - 3 tablespoons
- Salt - a pinch
Step by step preparation of whey and yeast pancakes:
1. In a bowl, pour the whey at room temperature, about 35 degrees. To do this, heat it up in the microwave, on the stove, or remove it from the refrigerator beforehand.
2. Pour sugar, dry yeast into a bowl and stir until completely dissolved.
3. Next, sift half of the flour through a fine sieve to enrich it with oxygen.
4. Knead the dough again and leave to infuse for half an hour.
5. Bubbles, holes should form on the surface of the dough, and it should slightly increase in volume.
6. At this point, add the remaining flour and a pinch of salt.
7. Knead the dough with a whisk so that there is not a single lump, and beat in an egg, which gently stir in.
8. Then pour in vegetable oil.
9. And stir again. The consistency of the dough will be slightly liquid, so the pancakes will not be too fluffy, but they will be very tender and soft. If you prefer very fluffy pancakes, then double the flour so that the dough is like very thick sour cream. But then keep in mind that the pancakes will be very dense.
10. Place the pan on the stove, add vegetable oil and reheat. Spoon the dough with a tablespoon and pour it into the pan. Turn on medium heat and fry the pancakes until small holes appear on the surface.
11. Flip the pancakes over to the other side and cook until golden brown for about 1 minute. They cook very quickly, so make sure they don't burn.
