Delicious kefir pancakes with apricots are easy and quick to prepare. This is a great option for a hearty breakfast, family gatherings over a cup of tea, and just a wonderful meal for a snack. To prepare them, you need the simplest and most affordable products: flour, kefir, soda (with them, baked goods turn out more magnificent), a pinch of salt, a little sugar and apricots. In fact, any changes are possible in the recipe. For example, any flour will do here, although the most delicious pancakes are wheat varieties. Eggs, the product is optional, you can do without them. Soda is successfully replaced with baking powder. Well, the apricots themselves are suitable in any form: fresh, frozen, in the form of dried apricots or jam. In the summer, use fresh fruits, and in the winter, use blanks.

Fritters cooked with kefir can be of different consistencies. To make them especially lush, the dough should be turned up steep, like thick sour cream. This slowly falls into the pan from the spoon and does not spread. Also, tall pancakes are fried in copious amounts of oil. But there are also disadvantages to such baked goods. It is significantly higher in calories, due to the higher content of flour and abundant oil in the pan, and also denser. I suggest frying pancakes from a thinner dough, according to the consistency of liquid yogurt. I add oil to the dough, and only grease the pan with a thin layer of it. Such pancakes are much softer and less high in calories.
