Delicious kefir pancakes with apricots are easy and quick to prepare. This is a great option for a hearty breakfast, family gatherings over a cup of tea, and just a wonderful meal for a snack. To prepare them, you need the simplest and most affordable products: flour, kefir, soda (with them, baked goods turn out more magnificent), a pinch of salt, a little sugar and apricots. In fact, any changes are possible in the recipe. For example, any flour will do here, although the most delicious pancakes are wheat varieties. Eggs, the product is optional, you can do without them. Soda is successfully replaced with baking powder. Well, the apricots themselves are suitable in any form: fresh, frozen, in the form of dried apricots or jam. In the summer, use fresh fruits, and in the winter, use blanks.
Fritters cooked with kefir can be of different consistencies. To make them especially lush, the dough should be turned up steep, like thick sour cream. This slowly falls into the pan from the spoon and does not spread. Also, tall pancakes are fried in copious amounts of oil. But there are also disadvantages to such baked goods. It is significantly higher in calories, due to the higher content of flour and abundant oil in the pan, and also denser. I suggest frying pancakes from a thinner dough, according to the consistency of liquid yogurt. I add oil to the dough, and only grease the pan with a thin layer of it. Such pancakes are much softer and less high in calories.

- Kefir - 1 tbsp.
- Flour - 1 tbsp.
- Soda - 1 tsp without top
- Vegetable oil - 3 tablespoons
- Eggs - 1 pc.

- Apricots - 10 berries
Step-by-step preparation of kefir pancakes with apricots:
1. Pour kefir at room temperature into a deep bowl and add baking soda. We mix. The mass will foam immediately before our eyes. This means that the fermented milk product has reacted with soda. Note that this only happens with warm foods. Therefore, before cooking, remove the kefir from the refrigerator in advance so that it warms up.
2. Pour flour to kefir. It is desirable to sift it through a fine sieve. It will be enriched with oxygen and the pancakes will be more magnificent and tender.
3. Knead the dough and pour in the vegetable oil. Stir it in to distribute the oil evenly.
4. Place an egg in the dough and stir the dough again.
5. Your dough should be smooth and smooth without lumps.
6. If the dough seems too thin, add a little flour and stir well again.
7. Add sugar. You can adjust its amount yourself. If you like baked goods that are very sweet, add more of it. But remember that apricots will add sweetness to the products.
8. Stir the dough well.
9. Wash and dry the apricots. Cut in half and remove the pit. Cut the pulp into medium-sized pieces.
10. Add the apricots to the dough.
11. Knead the dough to distribute the berries evenly.
12. Put the pan on the fire and heat well. Using a silicone brush, brush the bottom with a thin layer of vegetable oil. Take a portion of the dough with a tablespoon and pour into the pan.
13. Fry the pancakes on one side until golden, about 2 minutes. Then turn them over to the other side and fry the pancakes for another 1-2 minutes until golden brown. Serve the treat with any jams and sauces. Although pancakes with apricot filling, therefore, do not need additional sweeteners.
