Summer and barbecue are one inseparable whole. Even after the weekend, it seems that everyone: ate baked-fried. But by next weekend we will again stock up on firewood, meat, vegetables. Probably, there is something in these dishes that makes us come back to them again and again. Today we will not talk about meat soaked in fragrant smoke, but we will cook baked sweet bell peppers on the grill. They will make a good company with pork kebabs, grilled chicken wings, complement baked eggplants and mushrooms.
It is worth noting that charcoal vegetables, besides being simple to cook, also retain all the useful properties. As practice has shown, baked bell peppers have never remained unclaimed on the table. After all, they are simplicity, natural, beautifully fried in appearance, with pleasant taste and wonderfully harmonize with barbecue. Moreover, the latter, just, often remains undernourished.
You can serve baked peppers on their own or make a warm salad with them. To do this, you must simultaneously bake eggplants, zucchini, tomatoes and other vegetables on charcoal. Then cut them while still hot, season with salt, season with olive oil and serve.

Step by step cooking of baked sweet bell peppers on the grill, recipe with photo:
1. Select peppers that are juicy, fleshy, firm, without damage or rotten spots. Then wash and pat dry with a paper towel. Remove the stalk and cut out the seed box. Do this very carefully to keep the pepper intact. If there are seeds inside, turn the fruits over and shake them. So that all the seeds come out of the cavity.
2. String the peppers across on 2 skewers. If you use one skewer, then the peppers can scroll, which will not bake evenly on both sides. Peppers are best cooked whole, so they will retain their juiciness and flavor under the skin.
3. By this time the coals with good heat should be prepared. Make a fire, wait until all the wood is burned out and hot coals are formed. Then put the peppers on the grill.
4. Cook the peppers for about 20-25 minutes, turning occasionally. They should be browned and soft. If a fire ignites, then extinguish it with water from a pultilizer, and do not pour it in a thin stream, otherwise the heat of the coals will decrease and the vegetables may remain half-baked.
Season the cooked grilled sweet bell peppers with a pinch of salt and serve after cooking. Although the vegetables will still be tasty after cooling. If you wish, you can pour over them with your favorite sauce.
