Among the many hot dishes using seafood, dishes that are combined with rice should be distinguished. So, here you can include Italian risotto, Creole Jambalay pilaf and Spanish paella - these are dishes with one ideology, but different subtleties and secrets of cooking. Today we are cooking rice based on sunny Spain, which is known not only for bullfighting, flamenco and conquistadors, but also for its unique cuisine, which you cannot refuse even for a moment of true pleasure. And the pinnacle of Spanish culinary art is rightfully occupied by paella - a simple and refined dish made from rice with all sorts of additions, of which there are more than 300 versions.

Paella with shrimps is a wonderful tandem of rice grains and seafood. It is a Spanish paella - rice cooked in a pan with saffron (for color) and all kinds of "fillings". For example, vegetables, meat, sausage, seafood, in particular shrimp. Today, there are already improved and adapted recipes for this dish, like paella in a multicooker. However, I will focus on the traditional method. I propose to create a real Spanish paella with wonderful seafood in a frying pan.

Ingredients:

  • Rice - 250 g
  • Shrimps - 300 g
  • Dry white wine - 250 ml
  • Sweet bell pepper - 1 pc.
  • Saffron - 1 tsp
  • Garlic - 2 cloves
  • Sweet paprika - 1 tsp
  • Ginger powder - 0.5 tsp
  • Salt - 1 tsp or to taste
  • Drinking water - 200 ml
  • Olive oil - for frying

1. Wash sweet peppers, dry, remove the tail with seeds and cut into strips. Peel and cut the garlic into rings. Heat a frying pan with olive oil and put pepper and garlic to fry.

2. Fry food over medium heat until lightly golden and add shrimp. If they are frozen, thaw them first. This should be done correctly: first in the refrigerator, and then at room temperature.

3. Fry vegetables with shrimps for about 5-7 minutes and add thoroughly washed rice. Wash the rice well under 7 waters to remove all the gluten. This should be done as follows. Place the rice in a sieve set in a bowl, fill it with water and stir well. The water will become cloudy. Drain and refill with fresh. Repeat this procedure until the water is clear.

4. Fry rice with food for 5-7 minutes and add all the spices and seasonings.

5. Pour wine to the food and boil until it is completely absorbed by the rice. Then season the ingredients with salt, cover with water and boil.

6. Place the lid on the skillet and cook the rice for no more than 10 minutes. During this time, it will completely absorb all the water. Turn off the heat, but do not open the pan, leave the paella to infuse for 10-15 minutes. During this time, the rice will reach the desired consistency.

7. After a certain time, stir the ingredients and place the dish on the plates.
