The combination of young potatoes with scrambled eggs and herbs is universal, the second name of the dish is "Spanish omelet". The food is suitable for any meal: for breakfast, lunch and even dinner and will satisfy the needs of every person. A quick and easy recipe for a hearty and nutritious homemade balanced meal that takes no more than 30-35 minutes to cook.
It is better to use young potatoes for the dish, because it can be fried without peeling, and it fries much faster than the old one. If desired, you can supplement the meal with hard cheese, tomatoes, mushrooms, sausage, smoked brisket or minced meat, which will make the eggs much more satisfying. However, the dish turns out to be very tasty with only one potato.
You can cook food both in vegetable oil and melted pork fat. In the second case, the dish will be more satisfying, tastier, but also more high-calorie. However, if you are not intimidated by extra calories, then use the second option. In addition, the dish can be prepared with fried eggs or scrambled eggs with a mash. It depends on your taste and preference.

Cooking scrambled eggs with fried new potatoes
1. Wash the potatoes. You do not need to clean it, because his skin is young. However, if you are cooking old potatoes, then cut off the skin from it.
2. Fill the tubers with drinking water and place the pot on the stove. Boil, reduce the temperature and cook the potatoes until tender, i.e. softness. You do not need to salt it. The cooking time is about 15 minutes. If the potato is large, then perhaps it will reach readiness in 20-25 minutes.
3. When the potatoes are ready, remove them from the water and dry them. Then cut into round slices about 5-7 mm thick. To prevent your hands from cutting it hot, hold the tuber with a fork.
4. Heat a frying pan with butter (or lard) and put potatoes to fry. Set the heat to medium and cook until golden brown, literally 3-4 minutes.
5. Then turn the potatoes over and season with salt.
6. Immediately drive eggs into the pan and season with salt. Do not cover the pan with a lid, otherwise the yolks will become hard. Cook the eggs for no more than 5 minutes over medium heat.
7. Serve the finished meal immediately after cooking, since it is not customary to cook scrambled eggs for future use, they are the most delicious only freshly cooked. When serving, sprinkle it with chopped fresh herbs: dill, parsley, green onions.
