Fruits should be free from damage and spots, firm and smooth, not overripe and have a shiny surface. A vegetable is prepared, both with and without skin. Moreover, if the eggplant is ripe, then it must be pre-processed: cut, salt and stand for half an hour so that the specific bitterness goes away. Otherwise, the intended dish will taste bitter. Another secret of experienced chefs is that after soaking the eggplants in water, they need to be dried well, then they will be better fried. If the vegetable is young, then there is no bitterness in it. Accordingly, it is not necessary to soak it.
Also keep in mind that the structure of the eggplant pulp is like a sponge, i.e. absorbs oil abundantly during frying, from which the dish becomes much more nutritious. - Eggplant - 2 pcs.
- Cheese - 100 g
- Garlic - 2-3 cloves or to taste
- Salt - 1 tsp or to taste
- Mayonnaise - 1-2 tablespoons or to taste
- Vegetable oil - for frying
- Ground black pepper - a pinch
Step by step cooking eggplant with cheese, recipe with photo:
1. Wash and dry the eggplants with a paper towel. Cut them into rings 5 mm thick. If the vegetable is ripe, then do some preparatory work with it and remove the bitterness. To do this, sprinkle them with salt and leave for half an hour. Then wash well and pat dry with a paper towel.
2. Place the pan on the stove, add vegetable oil and heat well. Add the eggplant rings and turn on medium heat. Season them with salt and ground pepper and fry on both sides until golden brown.
3. Prepare the cheese by this time: grate it on a medium or fine grater. Peel the garlic as well.
4. Place the fried eggplants on a serving plate.
5. Season them with minced garlic.
6. Drizzle a little mayonnaise on each ring of blue. Although you can refrain from mayonnaise, this will make the appetizer more dietary.
