Ingredients:
- Eggplant - 2 pcs.
- Salt - 1 tsp
- Red pepper - 1/4 fresh pod
- Onions - 1 pc.
- Soy sauce - 3 tablespoons
- Ground black pepper - a pinch
- Vegetable oil - 3 tablespoons
- Garlic - 2 wedges
- Seasoning for Korean carrots - 1 tsp
- Table vinegar - 1 tsp
Step-by-step preparation of marinated eggplants in soy sauce, recipe with photo:
1. Wash the eggplants, cover with water and send to the stove. If you use ripe fruits, then there may be bitterness in them. To remove it, sprinkle the eggplants with salt and let stand for half an hour, then rinse with running water. Young fruits do not contain specific bitterness, therefore, such a procedure can be omitted.
2. Boil the eggplants in lightly salted water for 20 minutes.
3. Drain and cut the boiled fruit into cubes or cubes. Leave them to cool.
4. Peel the onions, wash and cut into thin half rings.
5. Peel hot red pepper from seeds with partitions and cut into small cubes. Peel the garlic and pass through a press.
6. In a small container, combine table vinegar, soy sauce and vegetable oil.
