At the New Year's table, you want to enjoy a light and tasty sweet dish, after which there will be no feeling of heaviness, but only a delicious aftertaste. Make raspberry panna cotta. This New Year's dessert is what you were looking for! Due to its light, airy texture, it will simply melt in your mouth. The taste of raspberries will delight children, and their mothers - a fairly low amount of calories. Such a dessert can be given even to the smallest, because it is made from milk, cream, berries - natural products that are in the diet of even a one-year-old child. So, all that remains is to roll up your sleeves and start cooking.

Ingredients:
- Cream 30% - 200 ml
- Milk - 200 ml
- Sugar to taste
- Pitted raspberry puree - 70 g
- Gelatin - 4 g
- Water - 50 ml
Step by step cooking panna cotta with raspberries
Let's start with preliminary preparation: soak gelatin in water. Let it brew and swell well for 10-15 minutes (you will see that the gelatin crystals will increase several times and become transparent).
At this time, heat the milk and pour the cream into it, bring to a boil and remove.
Add sugar and some of the gelatin to the milk-cream mixture, about two-thirds. We need one third for the raspberry puree layer. Mix well. The gelatin in hot milk will completely dissolve.
Pour panna cotta, cooled to room temperature, into molds. These can be beautiful bowls, bowls or cups. We send it to the refrigerator so that the bottom layer freezes.
Bring the raspberry puree on the fire to a temperature of 80 degrees, sweeten to taste and combine with a part of the gelatin that we left. When the panna cotta has hardened, spread the raspberry puree on top of it. If the time is close, you can make the top layer without gelatin: just put the sweetened raspberry puree on the pannu cotta.
