Cooking pancakes with kefir, a classic recipe:
1. Sift the flour through a fine sieve into a mixing bowl.
2. Add sugar, salt, baking soda to flour and stir dry ingredients. Then add an egg at room temperature.
3. Next, pour in warm kefir. The temperature of the products (kefir and eggs) is important because soda reacts only with warm ingredients.
4. Stir the ingredients until smooth and smooth so that there are no lumps. To do this, use a hand whisk, or better with an immersion blender, it copes better with lumps. The consistency of the dough will be liquid, like sour cream or yogurt, i.e. slightly thicker than pancakes. But if you want to get pancakes very lush and tall, then add 1 more tbsp. flour. Then the dough will be like thick fat sour cream and it will slowly fall off the spoon.
5. Sprinkle oil into the pan and place it on the stove. Heat well and pour out a portion of the dough with a tablespoon. It will drain from the spoon and spread in a circle, taking the desired shape.
6. Fry the pancakes on one side until golden, about 2 minutes, then turn them over and bring to a golden brown. This process will take you about 1-1.5 minutes. Serve the finished dish hot straight from the pan.
