It is very difficult to cook a baked duck in such a way that it turns out tasty, interesting, not dry, original and not greasy. But not enough to be afraid to take on the execution of this dish. However, it should be admitted that duck, in many families, is considered a traditional dish, which is prepared with pathos, tambourines and dances on solemn occasions.
Traditionally, duck is stuffed exclusively with apples. However, in order to diversify the usual dish, you can add all kinds of products to the filling, quince, pears, pineapple, oranges, peaches, potatoes, etc. The options are actually dark darkness. But in this recipe I suggest using pumpkin with plums. You can marinate a bird in any sauces: in honey with soy sauce, in wine, in kefir, in lemon juice, etc. Although you can even not lubricate it with anything, but only wipe it with salt and pepper. It turned out also divinely delicious!
When cooking duck, keep in mind that one medium carcass weighing about 2 kg will feed only four people. Therefore, if you plan to cook such a dish for a party, then you will need to cook two birds. They will look very impressive at a dinner party.

Ingredients:
- Duck - 1 carcass
- Pumpkin - 200 g
- Apples - 2 pcs.
- Plums - 200 g
- Soy sauce - 3-4 tablespoons
- Mayonnaise - 4 tablespoons
- Garlic - 3-4 cloves
- Salt - 1 tsp
- Ground black pepper - a pinch
- Any spices and herbs to taste
Cooking duck with pumpkin, apples and plums step by step:
1. Prepare the poultry marinade. To do this, in a saucepan, mix soy sauce, mayonnaise, salt, ground pepper and any spices. Mix well.
2. Peel the pumpkin, cut the fibers, peel the seeds, wash, wipe with a paper towel and cut into medium pieces. Wash the plums, remove the seeds and divide into two parts. Rinse the apples, remove the seeds and cut into 4 wedges.
3. Wash the duck, scrape the skin with an iron sponge, remove the internal fat (especially a lot of it in the tail), pluck out the feathers, if any.
4. Stuff the poultry with prepared pumpkin, plums and apples. Sew up the skin or hold it together with a toothpick, if desired, so that the filling does not fall out during baking.
5. Brush the cooked marinade on all sides of the bird.
6. Place the carcass in a roasting sleeve or wrap in cling foil. Fix the edges well. Leave the duck for 1-2 hours to soak in all the flavors.
7. Then heat the oven and send the duck to bake for 2-2.5 hours at 180 degrees. The specific roasting time depends on the size of the bird. For the carcass to acquire an appetizing crust, half an hour before being ready, unroll it from the package and turn on the “grill” mode in the oven. Serve the baked duck hot to the table.
