Barley porridge - is rightfully considered the queen of cereals. It is inexpensive, dietary and delicious. In ancient times, this particular porridge was very popular. It was served with game, stuffed with fish, and during Lent it was the first course. Most often, we eat barley porridge as a side dish, but it can be an excellent main course. For example, it is prepared with mushrooms, meat dressing, vegetables, fruits. In today's review, I want to share a recipe for barley porridge with pumpkin. It is sweet, at the same time dietary and tasty.
Pearl barley goes well with juicy pumpkin. The porridge turns out to be very tasty and satisfying. Thanks to pumpkin, unleavened pearl barley acquires such an unusual taste that this dish can be called a small masterpiece.
Today I have a recipe for porridge with milk. However, there are many variations of its preparation. If you want a more dietary option, then use regular drinking water. When cooking barley, it should be borne in mind that it takes a long time to cook. Therefore, soak it in boiling water for a couple of hours in advance, but you can also leave it soaked overnight. And only after that start cooking it.

Ingredients:
- Pumpkin - 200 g
- Pearl barley - 100 g
- Milk - 300 ml
- Brown sugar - 1, 5 tablespoons
- Ground cinnamon - 1 tsp
Step by step preparation of pearl barley porridge with pumpkin:
1. Sort the pearl barley by removing the stones and debris. Pour into a sieve and rinse under running water.
2. Pour barley into a saucepan, cover with hot water and leave for 2 hours. The amount of water should be 2-3 times more than cereals. Then drain the water, rinse the cereals and return to the saucepan. Fill it with fresh water and place it on the stove to cook.
3. Boil water, reduce the temperature to the lowest setting, cover the pot and cook the cereal for about 50 minutes. When it has absorbed all the water, put the saucepan on the stoves so that the porridge does not burn. If it is not overcooked, do not worry, it will continue to cook with all the ingredients.
4. Peel the pumpkin, cut the fibers and remove the seeds. Cut it into pieces, put it in a baking sheet and place in the oven for 20 minutes.
5. Bake the pumpkin at 180 degrees. It should shrink and become soft.
6. Put the baked pumpkin in a saucepan with boiled barley.
7. Add sugar and cinnamon powder. You can add any more herbs and spices. For example, vanillin, candied fruits, orange peel, etc.
8. Pour milk over the food.
9. Stir and heat. Bring to a boil, reduce the temperature, cover and simmer for 20-30 minutes. You can send the pan to the oven for half an hour at 180 degrees. But then watch out for the milk, add it if necessary.
10. Serve porridge to the table both warm and chilled.
