Each hostess should have several dishes in her arsenal that can be quickly made for unexpected guests, or suitable for a hearty family dinner when you don't want to stand at the stove for a long time. Then the casserole in a pan of eggplant, tomatoes, sausage and cheese will become a real lifesaver. This is an express option for dinner, breakfast and guests. The ingredients for the dish will require the most common ones. But as an option, you can add everything that is in the refrigerator here. After all, eggplants go well with many products.
Vegetables in a pan are interesting both on their own and in combination with sausage and cheese. Any sausage is suitable for this recipe, which can be replaced with any sausages, wieners or meat products. For example, with milk sausages, the casserole will come out more tender, smoked or Viennese will add a spicy note and pungency to the dish. For a children's table, choose less spicy options and reduce the amount of spices or do not add them at all. You can cook such a casserole not only in a frying pan, but also in a multicooker without a drop of oil or bake in an oven.

Ingredients:
- Eggplant - 2 pcs.
- Tomatoes - 1 pc.
- Sausage - 150 g
- Cheese - 200 g
- Salt - a pinch
- Ground black pepper - a pinch
- Vegetable oil - for frying
Step by step cooking eggplant, tomato, sausage and cheese casserole in a pan:
1. Wash and dry the eggplants. Cut off the tip from one end and the tail from the other. Cut the fruit into rings about 0.5-0.7 mm thick. Do not chop very coarsely, otherwise they will not cook well inside. If the vegetables are old and ripe, then the bitterness must first be removed from them. Then sprinkle the circles with salt and leave for half an hour. During this time, droplets form on their surface, which will need to be washed off with running water. With these drops, all the hateful bitterness will come out of the fruit.
2. Wash the tomato, dry it with a paper towel and also cut into slices with a thickness of at least 0.5 mm and no more than 1 cm.
3. Cut the sausage into thin rings.
4. Grate the cheese on a coarse grater.
5. Place the pan on the stove, add vegetable oil and heat. Spread the eggplants and grill them over medium heat on both sides until golden brown. Season them with salt on one side.
6. Place all the fried eggplant rings in the bottom of the pan.
7. Sprinkle them with cheese shavings.
8. Place the sliced sausage rings overlapping and sprinkle with cheese as well.
9. Then spread the tomato rings.
10. Sprinkle the remaining cheese on the casserole liberally. Place the fire divider on the gas burner. Place a frying pan on top, cover it with a lid and cook the casserole over low heat for half an hour. During this time, the cheese will melt, holding together all the layers of food. Serve the prepared casserole hot right after cooking.
