When using old fruits with dense skin, it should be peeled beforehand and the seeds removed. Depending on the age of the zucchini used, the method of preparing the pancakes depends. Young zucchini are very juicy, so after crushing them, the mass must be well squeezed out of excess liquid or add a little flour or semolina. Older vegetables are denser and contain less moisture.
