Azu is a delicious dish of Tatar cuisine, which is a piece of fried lamb stewed by housewives in a spicy sauce with various vegetables. For a long time, this dish has been prepared not only in Tatar families - it migrated to other countries, where it is prepared with pleasure, adapting to the products familiar to this or that culture. We will do the same: we will prepare the basics from chicken - a product that is more familiar and more common on our tables. Let's make the basics not too sharp, so that it can be safely given to children. Pickled cucumber will add a spicy taste and prevent the dish from being bland. By the way, the accompanying components in the basics can be very diverse: they add carrots, onions, garlic, fresh and canned tomatoes, raisins, bell peppers, gherkins. In short, try, experiment and enjoy the taste!

Ingredients:
- Chicken thighs - 300-350 g
- Potatoes - 500-600 g
- Bulb onions - 1 pc.
- Pickled cucumbers - 150 g
- Tomato paste - 1-2 tbsp. l.
- Salt, pepper - to taste
- Vegetable oil for frying
- Water - 100 ml
Step-by-step preparation of chicken azu with pickles
Wash the chicken thighs, remove the skin, remove the bone and cut the flesh into small pieces. Fry them lightly in vegetable oil. Remove the browned meat from the pan.
Peel the potatoes and cut them into thin long strips, roughly the same as for French fries. We send it to the pan where the chicken was fried, add, if necessary, a little more oil. Fry until the potato sides are lightly golden brown.
Return the meat to the pan, combining it with potatoes.
Cut pickled cucumbers into small cubes or strips and add to meat and potatoes.
Pour the basics with tomato paste diluted in water. Salt and pepper to taste.
Cover with a lid and simmer the dish over low heat for 40 minutes. During this time, the water will evaporate and the potatoes will become very soft.
Chicken azu with pickled cucumbers is ready! We serve this hearty and tasty dish with freshly baked unleavened flat cakes or lavash. Greens and vegetables will also come in handy. Try it yourself and feed your family with this wonderful dish! Have a hearty lunch!
