In our country, Japanese products can be easily replaced with domestic ingredients. For example, replace sake with vodka, and mirin with your favorite wine. Teriyaki is usually served with fish and meat dishes. It is also used to prepare all kinds of products that are automatically called Teriyaki. The processing of products involves cutting the meat into small pieces, lightly marinating in the sauce and frying until caramelized. And thanks to the sugar present, the dish acquires its characteristic shine. The Japanese call Teriyaki both the sauce and the way of cooking the dishes that are cooked in it. Our supermarkets now sell ready-made Teriyaki sauce, but one made with our own hands is still tastier.
You can cook meat, fish and poultry in Teriyaki sauce. Chicken wings, pork ribs and duck breasts are very tasty. Boiled rice is usually served as a side dish. Teriyaki dishes are a great option not only for a daily menu, but also for a festive feast. Today we will cook Teriyaki duck fillets. Duck meat turns out to be amazing, tender and aromatic. This gourmet dish is quick to prepare and will take pride of place on any table.

Ingredients:
- Duck breasts - 2 pcs. total weight 400-500 g
- Ground black pepper - a pinch
- Sugar - 1/3 tbsp. (you can put less)
- Vegetable oil - for frying
- White sweet wine - 100 ml
- Soy sauce - 100 ml
- Rice vinegar - 2 tsp (can be substituted with wine or apple cider vinegar)
- Vodka - 30 g
- Orange zest - 1 tsp
- Ground nutmeg - 2/3 tsp
- Salt - a pinch
Step by step preparation of teriyaki duck fillet, recipe with photo:
1. In a container, combine all the liquid ingredients: soy sauce, white sweet wine, rice vinegar, vodka.
2. Add sugar to the marinade.
3. Then add ground nutmeg, salt and black pepper.
4. Then grate the orange zest on a fine grater. If using dried zest, grind it in a mortar or mill. Stir the sauce well and heat to 70 degrees to dissolve the sugar.
5. Wash the duck breasts and dry with a paper towel. If desired, remove the skin from them or leave them as they are. Cut the fillets into equal pieces, such as thin strips.
6. Dip the duck meat in warm sauce, stir and marinate for 20 minutes.
7. Heat the oil in a skillet and add the teriyaki duck fillets to grill. First, fry them well until golden brown in a very preheated pan, stirring occasionally, for 3 minutes. Then add the whole marinade to them and continue simmering over medium heat for another 5-10 minutes.
