The original sandwiches are very satisfying, juicy and aromatic. A light summer snack is not particularly difficult, because can be prepared quickly, easily and from inexpensive products.
Zucchini and tomato sandwiches are very versatile. They will decorate your festive table and surprise all guests. With a couple of simple foods in the fridge, you can quickly organize an unusual breakfast for the whole family, which will diversify your daily menu. They will complement the dining table and replace ordinary bread with a bowl of soup or borscht. Juicy and bright vegetable sandwiches are perfect for a quick snack. They will be an alternative to the classic sausage and cheese sandwiches, especially in the summer, when these products are boring. Another such unusual snack will delight those who do not eat meat products and adhere to a proper and healthy diet. Ingredients:
- Bread (any) - 6 slices
- Greens (any) - to taste
- Tomatoes - 1-2 pcs.
- Zucchini - 0.5 pcs.
- Mayonnaise - 1-2 tablespoons (not necessary)
- Salt - 0.5 tsp or to taste
- Vegetable oil - for frying
- Garlic - 2 cloves
Step by step cooking of zucchini and tomato sandwiches:
1. Wash the zucchini and trim off the ends on both sides. Cut it into slices about 5-7 mm thick. If you use old fruits (usually these are in late summer and early autumn), then peel them and remove large seeds inside.
2. Heat a frying pan with vegetable oil well and lay out the zucchini rings. Fry one side over high heat until golden brown.
3. Turn over, salt and brown the other side over moderate heat. Do not cover the pan with a lid, otherwise the zucchini will be steamed, not fried, and you will not get a crispy and golden brown crust. Place the fried zucchini on a paper towel to remove excess oil.
Before frying, some housewives first roll the zucchini on both sides in flour or in a beaten egg with salt. If you are used to doing this, then fry the zucchini according to your proven recipe. I like to feel the taste of a vegetable more than flour and batter.
4. Cut the bread into slices about 1 cm thick. Bread can be used, either white or rye, as a baguette or a loaf, depending on preference. I don’t do anything with the bread, I just put a couple of slices of fried zucchini on top of it. But here you can improvise. For example, roll sliced bread in a beaten egg and quickly fry until browned on both sides over high heat. It can also be dried in a toaster or in a clean and dry skillet without oil to make the bread crispy. And if you are preparing sandwiches for a festive table, I recommend using the culinary ring and cutting out beautiful even circles with a diameter, like zucchini, about 6-7 cm. If you do not have one, use an ordinary glass.
For any kind of use of bread, the cooled slices can be greased on top with mayonnaise if desired. I rarely do this, because don't want extra calories.
5. Peel the garlic and squeeze through the garlic or grate it. Spread the garlic mixture over the surface of the courgette. But if you are making sandwiches for breakfast, I recommend refraining from garlic and replacing it with some aromatic and piquant herbs like cilantro or basil. Because garlic gives a persistent unpleasant odor.
6. Wash the tomato well and dry it with a paper towel. Choose fleshy and ripe vegetables, or pink tomatoes. Cut them into slices up to 1 cm thick and place on the zucchini. Season them a little with salt. But keep in mind that then the sandwich must be served immediately. As the salt promotes the release of liquid, the tomato will begin to juice.
7. Decorate ready-made zucchini sandwiches with tomatoes at your discretion with any greens, for example, a sprig of parsley.
