Solyanka is expensive, long, difficult … Most housewives think so, so this first dish is never prepared. However, this is only at first the recipe is scary, in fact, there is nothing difficult here. And if you prepare for the preparation of this dish in advance, then the budget of the hodgepodge will cost an acceptable amount of money.

It is a hodgepodge collection of scraps and leftovers of meat products, and the more there are of them and of different types, the tastier the food will be. That is why stock up on meat products in advance. How? Very simple! For example, cook pork soup, cut a small piece and send it to the freezer. After a week, cook chicken stew, repeat the same thing: put a small portion in the freezer. You can also freeze the leftover sausages, ham, smoked meats and offal that you use for sandwiches or making salads. In this simple way, you discreetly pick up the right amount of different pieces of meat, from which you cook a fragrant hodgepodge.

According to the culinary canons, there is a list of mandatory products for making a hodgepodge. The first is the kidneys. Second, any smoked meat should be present: balyk, sausage, chicken or other meat product. Third - pickled, lightly salted or pickled cucumbers. Fourth - serving a hodgepodge, put a slice of lemon and an olive in the portion. But from my own experience I will say that the olive does not give any taste, but only decorates the dish.

Ingredients:

  • Pork kidneys - 3 pcs.
  • Onions - 1 pc.
  • Pork - 200 g
  • Pickled cucumbers - 2 pcs.
  • Carrots - 1 pc.
  • Vegetable oil - for frying
  • Smoked ham - 200 g
  • Tomato paste - 1 tablespoon
  • Bay leaf - 2 pcs.
  • Allspice peas - 4 pcs.
  • Salt - 1 tsp or to taste
  • Ground black pepper - a pinch

1. The first step is to prepare the kidneys. they take the longest to cook. Since they have an unpleasant odor, wash them, put them in a saucepan and fill them with drinking water. Leave to soak for 3 hours, preferably overnight. In this case, change the water 3 times.

2. After they wash, fill with clean water and boil until cooked for about 45-50 minutes. Change the water three times after boiling, and until tender, bring in the last water. Cut out the inner ducts from the finished buds and cut them into cubes.

3. Wash the pork, remove excess fat, rinse and cut into slices, as in Olivier. Place it in a saucepan and add the peeled bay leaf onion. You can, of course, cook it in a whole piece, but then the meat will not be cut, but torn along the fibers, which looks ugly in the finished dish. In addition, when it is boiled, already pre-cut, then it does not have to be removed from the broth, but simply further lay the ingredients and continue cooking the dish.

4. Fill the meat with drinking water and boil the broth for 40 minutes. After boiling, remove the resulting foam. At the end of cooking, remove the bay leaf onion and discard. They are not needed in the dish, it is only necessary that they flavor the dish.

5. Peel the carrots and cut into cubes. Cut the pickles to the same size as the carrots.

6. Heat oil in a skillet and add carrots and cucumbers. Fry them over medium heat, stirring occasionally, until golden brown.

7. Meanwhile, cut the smoked ham into cubes.

8. In the finished broth, send the fried cucumbers with carrots.

12. Stir the hodgepodge, taste and add spices and herbs as needed. Boil the food together for about 10 minutes and remove the pan from the stove. Pour the finished hodgepodge into portioned plates and serve.
