- Wheat flour - 250 g
- Citric acid - 1 tsp
- Cottage cheese - 150 g

- Salt - a pinch
- Sugar - 100 g or to taste in the dough, 40 g for frying plums
- Baking soda - 1 tsp
- Plums - 300 g
Step-by-step preparation of a roll with plums on curd dough:
1. Pour flour and curd into a mixing bowl. You can sift the flour through a fine sieve, and beat the cottage cheese with a blender. The flour will be enriched with oxygen, and the curd will become homogeneous. But if you like to feel the curd lumps in the dough, then you can do nothing with the curd.
2. Cut the frozen butter into small pieces and add to the dough. Next, pour in the egg, add sugar, salt, soda and citric acid. If the cottage cheese is too fat, then you can not add butter at all, and, accordingly, vice versa - the cottage cheese is fat-free or dry, then double the amount of butter.
3. Knead an elastic dough. It should not stick to the hands and walls of the dishes. Shape it into a ball, wrap with cling film and refrigerate for half an hour.
4. Wash the plums and pat dry with a paper towel. Remove the pit and cut the berries into 4 pieces.
5. Put 20 g of butter in a skillet and melt over medium heat.
