Cheese soups come to us from European cuisine. Their main highlight is the addition of cheese during the cooking process. To do this, use any cheese - processed, soft, hard and even blue cheese. Although the latter option is for connoisseurs only.
Cheese soup with mushrooms turns out to be delicious - with a rich creamy mushroom taste. In addition to mushrooms, you can add chicken, smoked meats or just vegetables to the soup. Every time, the result will delight you. You can cook soup both in a slow cooker and on the stove.

Ingredients:
- Potatoes - 4-6 pcs.
- Carrots - 1 pc.
- Onions - 1 pc.
- Champignons - 500 g
- Chicken - 400 g
- Processed cheese "Druzhba" - 2 pcs.
- Water - 3–3, 5 l
- Vegetable oil - 2-3 tbsp. l.
- Salt and pepper to taste
Step-by-step preparation of cheese soup with champignons in chicken broth
1. First of all, put the broth to boil. To prepare this, you can take a chicken soup set or a whole chicken breast. After boiling, salt the broth and add spices - bay leaf, allspice and black peppercorns. While the broth is cooking, prepare the vegetables. Peel and dice the onions and carrots. We wash the champignons and cut into slices.
2. Heat the vegetable oil in a frying pan and spread the onion. Pass it until transparent, then add carrots and mushrooms to it. We pass everything together for another 5-7 minutes. The champignons should not be overcooked, they should change slightly in color. Then the soup will be fragrant.
3. When the meat is ready, remove it from the broth and add the chopped potatoes to it. We are waiting for the water to boil.
4. Now add the onion, carrot and mushroom frying. Cook the soup for 20 minutes over medium heat. Don't forget to salt and pepper the soup to your liking.
5. Finally, add the grated processed cheese. To easily grate a block of processed cheese, put it in the freezer at the beginning of the soup, after which it will be easy to grate. Cook the soup for another 2 minutes. Turn off the gas and cover with a lid.
6. Let the soup sit under the lid for about 10 minutes to melt the cheese.
