The apples for the roll are used fresh, but if desired, they can be pre-caramelized, then the dessert for tea will become even tastier, and at the same time more high-calorie. This baking recipe is very simple and not difficult. Any novice hostess can handle it. The dough itself is universal, so it is perfect not only for sweet pastries, but also for salty filling.

Ingredients:
- Sour milk or kefir - 250 ml
- Apples - 3 pcs. medium size
- Semolina - 100 g
- Ground cinnamon - 1 tablespoon
- Salt - a pinch
- Wheat flour - 250 g
- Sugar - 5 tablespoons or to taste (for filling)
- Vegetable oil - 50 ml
- Baking soda - 0.5 tsp
- Eggs - 1 pc.
Step-by-step preparation of a pigtail roll with apples, a recipe with a photo:
1. Place flour, semolina, baking soda, and a pinch of salt in a deep bowl. Stir the bulk products.
2. Add a raw egg to the dry mixture.
3. Next, pour kefir at room temperature. Since fermented milk products enter into the desired reaction with soda only when warm. Therefore, take it out of the refrigerator beforehand or warm it up a little. For the same reason, the added eggs should also be at room temperature so as not to chill the dough.
4. Knead an elastic dough so that it does not stick to the sides of the dishes and hands. Cover the dough with a cotton napkin and leave for 15 minutes to swell the semolina slightly. Otherwise, in the finished dough, it will grind on your teeth.
5. Roll out the dough with a rolling pin into a rectangular shape about 5 mm thick.
6. Wash the apples, dry with a paper towel, remove the stem with the core and cut into half rings about 5 mm thick. Place apples overlapping on top of each other. Positioning them in the center of the entire length of the rolled layer.
7. Sprinkle apples with ground cinnamon and sugar. Cut the free edges of the dough on both sides obliquely into strips at a distance of 1.5-2 cm from each other, as shown in the photo.
8. Cover the apple filling with an overlap alternately on each side with cut strips of dough, forming a pigtail.
9. Brush the finished roll with vegetable oil, egg or milk so that the baked goods have a ruddy shade. Heat the oven to 180 degrees and send the pigtail roll with apples to bake for 30-40 minutes. Cool the finished product and, if desired, sprinkle with powdered sugar.
