In fact, homemade semi-finished products are not only a guarantee of an excellent, tasty dish, they save housewives a lot of time! That is why I devote a couple of days at the end of summer to close several options for all kinds of gas stations. One of my favorites is the tomato and beetroot dressing for the winter. Ingredients:
- Beets - 3 kg
- Tomatoes - 1 kg
- Carrots - 1 kg
- Onions - 1 kg
- Sweet pepper - 1 kg
- Vegetable oil - 0.5 l
- Vinegar 9% - 200 g
- Salt - 2 tbsp. l.
- Sugar - 200 g
Step-by-step preparation of beetroot and tomato dressing for the winter
We start cooking with beets, as it will take longer to cook than other vegetables. We clean the roots, wash them and rub them on a grater. We grind all vegetables exactly as you are used to: into a coarse or fine grater, straws, etc.
Pour the vegetable oil into the saucepan where we will prepare the dressing and pour the grated beets. While stirring, simmer for 20 minutes. To keep the beets bright and sweet, add 2 tablespoons of vinegar and the same amount of sugar to it.
We clean the carrots and also grate them.
We clean the pepper from seeds and stalks, clean the onions and finely chop.
We pass the tomatoes through a meat grinder or puree them with a blender.
All prepared and chopped vegetables: carrots, onions and peppers, put in a saucepan and mix with beets.
Add salt, the remaining sugar, pour in the ground tomatoes and vinegar, mix and cook for about 1 hour.
We lay out the finished dressing in sterile jars, roll it up and wrap it up until it is completely cool.
An excellent semi-finished product - dressing for the winter with tomatoes and beets is ready. Store it in a dark place and cook delicious and rich borscht! Bon Appetit!
