Liver is a universal by-product from which many tasty and healthy dishes are prepared, such as pate, salads, cakes, soups, stews … However, due to the fact that the liver is a little dry and harsh, not everyone likes to cook it. Therefore, I suggest trying to cook liver chops in a pan. I am sure that you will change the attitude towards this product forever. In addition, the liver is tasty and healthy, and homemade liver chops remain soft and tender even on the second day. The principle of cooking chops is not much different from the preparation of a regular liver, perhaps only with time. The chops are thin so they roast faster. The variety of offal can be any: beef, pork, chicken.
It should be noted that liver dishes are very healthy, because the by-product contains vitamins A, groups B, E, K. It contains micro and macro elements, especially a lot of iron. It is useful to include the liver in the diet of people suffering from anemia and diabetes mellitus. But to get all these healing substances, buy a light brown or reddish brown liver. Do not get a very light or dark liver. Its color should be uniform without black and dried spots, the surface is firm and even, and the smell is fresh, pleasant and slightly sweet. Ingredients:
- Liver - 300 g (any variety, pork offal is used in the recipe)
- Onions - 1 pc.
- Salt - 0.5 tsp or to taste
- Ground black pepper - a pinch
- Mayonnaise - 1-2 tablespoons (optional)
- Soy sauce - 2 tablespoons
- Hard cheese - 150 g
- Garlic - 1-2 cloves
- Vegetable oil - for frying
Step by step cooking liver chops in a pan, recipe with photo:
1. Peel the onions and garlic, wash and chop into thin strips.
2. Grate the cheese on a medium grater.
3. Wash the liver, peel all excess, cut into layers of 1, 5-2 cm, cover them with cling film and lightly beat off with a kitchen hammer. If you are afraid that the liver will taste bitter, then pre-soak it in cold water or milk for 30 minutes. Then drain the water / milk, dry and cook further according to the recipe.
4. Fry onions with garlic in a frying pan in vegetable oil until golden brown.
5. Put the beaten liver in a hot frying pan with vegetable oil, brush with mayonnaise and pour over soy sauce, season with salt and black pepper. You can pre-marinate the liver chops in your favorite sauce.
6. Cook the chops on one side over medium heat for about 5 minutes and turn over to the other side. Place the fried onions on top of them immediately and sprinkle with the cheese shavings. Place the lid on the skillet and continue to grill the chops for another 5 minutes. Liver chops are fried very quickly in the pan, so do not overcook them or they will dry out.
7. Serve freshly prepared dish to the table.
