The Georgian dish - chicken tobacco was a favorite dish of the USSR times. The dish got such a strange name thanks to a special thick-walled "tapa" frying pan with a press lid, in which the poultry is cooked. That is, the lid without a handle, flat, presses the chicken tightly to the bottom of the pan and contributes to the rapid formation of a uniform golden brown crust. If you do not have special utensils, you should not give up delicious food. You can cook chicken in a regular frying pan, and build a press from improvised means in your home kitchen.
Another feature of the food is that a whole chicken carcass is flattened before frying, i.e. fights back well with a kitchen hammer. The dish is very simple to prepare and it can be easily repeated by any novice housewife. At the same time, a juicy, fragrant chicken with a golden and crispy crust turns out to be very tasty. There are many culinary variations of recipes for this dish, where the chicken is rubbed with different products: salt, pepper, garlic, sour cream, spices, herbs, adjika, etc.

Ingredients:
- Chicken - 1 pc. (weighing about 500-700 g)

- Sour cream - 2 tablespoons
- Ground nutmeg - 0.5 tsp
- Ground black pepper - a pinch
- Salt - 0.5 tsp or to taste
- Saffron - 0.5 tsp
Step by step cooking tobacco chicken in a pan, recipe with photo:
1. Peel the garlic and chop finely or pass through a press.
2. Pour sour cream into a small bowl, add chopped garlic, salt, black pepper, ground nutmeg, spices and herbs. Stir well to distribute food evenly.
3. Cut the chicken across the breast, cut the joints above the drumstick and wings so that they come out of the carcass and spread out on the board. Beat it well with a kitchen hammer so that it takes on an even shape.
4. Spread the sauce well on all sides. You can leave it to marinate for half an hour if you have free time.
5. Place the frying pan on the stove, add vegetable oil and heat. Place the chicken and press down with some weight on top. I chose a kettlebell, but it’s mono to build a different structure. Put a plate on the carcass, on which to place a jar of water. Cook the tobacco chicken in a skillet for about 10 minutes over medium heat, then turn over and fry for the same amount of time until golden brown. It is important that the press frying time does not exceed 10 minutes. At the end of cooking, add some water to add juiciness to the meat. When serving the chicken on the table, pour over it with the liquid that was formed during the frying process and you can decorate it with pomegranate seeds or herbs.
