Before you start cooking, it is important to choose the right lamb. Since the characteristic specific smell of lamb prevents it from taking a confident place on our everyday table. A sufficiently persistent and unpleasant aroma can ruin any dish. But experienced chefs assure that you can fight it. The most ideal meat of a young lamb (milk lamb) up to 3 months. He does not have a specific smell, unlike the old animal. Old lamb is dark red in color, so the lighter the meat the better. If it is impossible to buy a milk lamb, give preference to animal meat up to 18 months. But completely remove the fat from it before cooking, and if the smell is too pronounced, then boil it first, and then bake it. This is a good solution for lamb in a pot in the oven, because there is no need to serve meat as a whole "piece".

  • Bay leaf - 3 pcs.
  • Potatoes - 6-8 pcs.
  • Ground black pepper - a pinch
  • Allspice peas - 6 pcs.
  • Salt - 1 tsp or to taste
  • Vegetable oil - for frying

1. Wash the lamb, dry it with a paper towel and cut into bones. If ribs are missing, any other part of the carcass can be used. If there is fat on the meat, cut it off.
