- Lamb ribs - 600 g
- Allspice peas - 4-5 pcs.
- Salt - 1 tsp or to taste
- Bay leaf - 2-3 pcs.
- Ground black pepper - 0.5 tsp or to taste
- Vegetable oil - for frying
- Potatoes - 5-6 pcs.
Step by step cooking stewed lamb ribs with potatoes in the oven, recipe with photo:
1. Wash the ribs and dry with a paper towel. Trim off excess fat and chop them by the bones.
2. Peel the potatoes, wash and cut into medium-sized cubes.
3. Heat the oil in a heavy-bottomed skillet, cast iron or any utensil with thick sides and bottom. Add ribs and fry until golden brown. During frying, they should be in one row so that they are evenly cooked on all sides. If they are piled up in a mountain, they will be stewed, not fried.
4. Add the potatoes to the lamb, stir and continue to fry over medium heat.
5. When the potatoes are lightly golden brown, add salt, black ground pepper, bay leaves and allspice peas to the pot.
6. Pour water into the container so that it only covers the food and bring to a boil on the stove. Then close the container with a lid and send it to a heated oven up to 180 degrees for 45-50 minutes. Although it is possible to cook stewed lamb ribs with potatoes in the oven for longer, about 1, 5 hours, if you like heavily boiled potatoes.
