Today we will make baked lamb ribs with potatoes and tomato sauce. The result will be a full-fledged hearty dish that does not require an additional side dish. Ingredients:
- Lamb ribs or other part of the carcass - 800 g
- Potatoes - 8 pcs. (2 pcs. in each portion)
- Bay leaf - 2 pcs.
- Allspice peas - a pinch
- Onions - 2 pcs.
- Tomato paste - 4 tablespoons
- Garlic - 2 cloves
- Ground black pepper - a pinch
- Salt - 2 tsp or to taste
Step by step cooking lamb ribs with potatoes and tomato paste in the oven, recipe with photo:
1. Wash the meat, pat dry with a paper towel and cut into pieces. If there is a lot of fat on the lamb, you can cut it off. But do it at will. Depending on the presence of the amount of fat, so fatty, satisfying and nutritious meat will turn out.
2. Heat the frying pan well and put the fried meat. If there is a lot of fat on the ribs, then you do not need to pour oil into the pan. Your own fat will melt a little and you can fry meat on it. If there is little fat, apply a thin layer of oil to the bottom of the pan and heat it well.
3. Fry the lamb over high heat until golden brown. This will preserve juiciness and juice in the meat.
4. While the meat is roasting, peel and chop the onions in half rings.
5. Then chop up the peeled garlic cloves.
6. Send the onion pieces to the skillet. Stir, reduce heat to medium and continue frying.
7. Add minced garlic to the meat. Stir and fry the meat until the onions are translucent.
8. Peel the potatoes, rinse and cut into cubes.
9. Pick up portioned pots. If there are no such pots, then take one large one. Arrange the fried ribs with meat in the pots.
10. Pour potatoes into the pots.
11. Place bay leaf, season with salt and ground pepper. You can add any spices and herbs. This recipe uses ground sweet paprika.
12. Pour the tomato paste over the food. Close the pot with a lid and send to the oven. Turn on 180 degrees and cook for 1 hour.
13. Stir the meat in the potatoes before serving and consume hot, freshly cooked.
