If you think that stuffed pancakes are prosaic and mundane, then I want to dissuade you from this! Of course, in our traditional cuisine, this food has established itself as an everyday dish. However, spring rolls may well complement the festive menu. Especially if they are cooked with meat and mushrooms, I assure you that the success of the dish will be guaranteed! Such pancakes turn out to be hearty and nutritious, juicy and tender, and for cheese lovers I recommend adding more cheese to the filling. But first, some helpful tips.
- The dough for these pancakes should be bland or slightly salty.
- Its consistency must be liquid so that the pancakes are thin, because the filling will be wrapped in them.
- Any type of meat can be: beef, lamb, veal, pork, etc.
- For the filling, you can use the leftovers of meat from the preparation of the second or first course, which are twisted in a meat grinder.
- A more common type of meat filling is twisted boiled meat and fried onions.
- To shorten the cooking time, buy ready-made minced meat and simply fry it until tender.
- Garlic, spices and tomato paste will add pungency and piquancy to the minced meat.
- Wrap the pancakes in rolls, envelopes or bags.
- Stuffed pancakes are served hot or cold with sour cream or grated cheese.
- To enhance the taste, the stuffed pancakes can be fried in a pan in butter.

- Garlic - 2 cloves

Step by step preparation of stuffed pancakes with meat and mushrooms, recipe with photo:
1. Prepare the ingredients for the pancake dough: flour, milk, eggs, oil, salt and sugar. Remove them from the refrigerator and leave them in the room to warm up to the same temperature.
2. Also prepare the stuffing products. If the meat and mushrooms are frozen, then defrost them in a natural way without using a microwave and hot water. It is better to do this for a long time, first in the refrigerator, then at room temperature. You can use any variety of mushrooms.
3. Start kneading the dough. Pour milk, vegetable oil into a container and add eggs. Stir liquid ingredients until smooth.
4. Pour flour, salt and sugar into the liquid base. I recommend sifting the flour through a fine sieve so that it is enriched with oxygen, which will make the pancakes more tender.
5. Knead to a homogeneous smooth dough using a whisk or blender.
6. Place the pan on the stove, grease the bottom with fat so that the first pancake does not turn out lumpy, scoop the dough with a ladle and pour into the pan. Fry the pancake on both sides until golden, about 1-1.5 minutes on each side.
7. In the meantime, cook the meat along with the frying pancake. Dip it in a pot of boiling water, season with salt, pepper and simmer until tender.
8. Peel the onions and garlic, wash, cut into any shape and fry in a frying pan until transparent.
9. Fry the mushrooms in another skillet. Wash and cut them beforehand.
