Its peculiarity is that the chefs do not abuse aromatic spices, but preserve the taste of the main ingredient as much as possible. It is important for them that the taste of a vegetable is felt in the eggplant, and the lamb remains lamb. Today I prepared a Turkish eggplant recipe. This is a delicious eggplant dish with minced meat. A delicious meaty vegetable combined with aromatic meat is an ideal dish for a family dinner, gatherings with friends over a glass of wine or a gala feast. Cook this appetizer at least once and it will become a real favorite of your family. But first, I suggest that you familiarize yourself with the general principles of cooking.
- It is important to purchase quality minced meat, ripe and fresh eggplants.
- Minced meat can be any, incl. and mixed. For example, assorted pork and beef or other combinations of varieties.
- It is advisable to cook minced meat yourself.
- Spices and herbs will add a unique "oriental taste" to the appetizer. Use them according to your taste: oregano, paprika, coriander, thyme, basil …
- For the filling, you can choose other ingredients to your taste: tomatoes, carrots, onions, garlic, herbs, bell peppers …
- Add tomato sauce to the appetizer. You can make it yourself or dilute the tomato paste with water.

Ingredients:
- Eggplant - 2 pcs.
- Onions - 1 pc.
- Meat (any sort) - 300 g
- Vegetable oil - for frying
- Tomatoes - 2 pcs.
- Dry white wine - 100 ml
- Dill - a few twigs
- Spices and herbs to taste
- Sweet pepper - 1 pc.
- Hot pepper - 1 pc.
- Garlic - 2 pcs.
- Ground black pepper - a pinch
- Salt - 1 tsp
Step by step cooking Turkish eggplant with meat, recipe with photo:
1. Peel sweet peppers from seeds with partitions and chop very finely.
2. Peel the onions and finely chop them.
3. Wash the tomatoes, dry and chop finely.
4. Finely chop the peeled cloves of garlic, dill and hot peppers.
5. In a frying pan in vegetable oil, sauté the onions until lightly translucent.
6. Add bell peppers to the skillet and continue frying.
7. Add chopped tomatoes and sauté over medium heat for 2 minutes.
8. Pour white wine into the pan, add garlic, herbs and hot peppers. Simmer the food for 5 minutes.
9. Twist the meat with onions through a meat grinder.
10. Season the minced meat with salt and black pepper and mix well.
11. Wash the eggplants, dry and cut into rings of 5-6 mm. If you use ripe fruits, then usually there is bitterness in them. To remove it, season the eggplant with salt and let sit for half an hour. During this time, droplets will appear on the vegetable, through which bitterness will come out. Rinse them under running water and dry with a paper towel.
12. On each eggplant circle, place the minced meat in a layer of 7-8 mm.
13. Place the eggplant and minced meat rings one after the other in a convenient baking dish.
14. Pour the vegetable dressing evenly over the top.
15. Heat the oven to 180 degrees and send the Turkish eggplants with meat to bake for half an hour.
