- Zucchini - 1 pc.
- Eggplant - 1 pc.
- Sweet pepper - 1 pc.
- Carrots - 1 pc.
- Tomatoes - 2 pcs.
- Onions - 1 pc.
- Garlic - 2 cloves
- Chicken broth - 1.5 l
- Salt - 0.5 tsp or to taste
- Ground black pepper - a pinch
- Bay leaf - 2 pcs.
- Allspice peas - 4 pcs.
Making a vitamin soup for a carbohydrate-free diet
1. Peel carrots, onions and garlic, wash and chop: onion with carrots in larger 1-1.5 cm pieces, and finely garlic.
2. Wash the courgette, eggplant and tomatoes and cut into cubes. It is advisable to use eggplant with zucchini young. Otherwise, they will have to be peeled from hard peels and tough seeds removed. And also soak the eggplant in a saline solution to remove the specific bitterness.
Peel the bell peppers from seeds and partitions, remove the tail and cut into pieces.
3. Place all vegetables in a 2 L cooking pot.
4. Add bay leaves, peppercorns, salt and ground pepper.
5. Pour the ingredients with broth or regular drinking water and put everything on fire.
6. Bring food to a boil, lower the temperature, cover and simmer for about half an hour. If desired, the ready-made soup can be interrupted with a blender to make a creamy soup.
