The dish does not take a lot of time, but is prepared from products that are almost always available in the kitchen.
Such tortillas can be prepared both sweet and snack. It all depends on the amount of added sweetener. But if you don't use honey, then the pancakes will turn out salty and will be an excellent addition to soup, borscht and other first courses. For sweet fritters, use hard and not overly salty cheeses. For snack pancakes, Adyghe cheese, feta cheese, suluguni and other types of pickled cheeses are suitable.

- Kefir - 200 ml
- Salt - a pinch
- Vegetable oil - 20 ml, plus 1 tsp. for greasing the frying pan
- Flour - 130 g
- Honey - 1 tablespoon
- Sour cream - 75 g
- Hard cheese
- Eggs - 1 pc.
Step-by-step preparation of honey pancakes on kefir with cheese, recipe with photo:
1. Pour kefir into a bowl for kneading dough. You can use curdled milk or sour milk instead.
2. Then add raw eggs.
3. Whisk the dough until smooth and pour in the vegetable oil. Then stir the liquid foods again vigorously to make the oil viscous. Adding it to the dough allows you not to add it to the pan while frying the pancakes.
4. Pour honey into the food and stir well again with a whisk. If the honey is thick, pre-melt it in a steam bath or microwave. But do not bring it to a boil.
5. Add a pinch of salt and fine flour to the liquid ingredients. So it will be enriched with oxygen, and the pancakes will become more tender and soft.
6. Knead the dough with a whisk until smooth and smooth without lumps.
7. Grate the cheese on a coarse grater and add to the dough.
8. Stir the dough to distribute the cheese evenly over the dough.
9. Before baking the first pancake, lightly oil the pan and heat it well. Do not add oil further to the pan, because it is added to the dough and the pancakes will not stick during frying. Spoon the dough with a tablespoon and pour it into the pan, forming round or oval pancakes.
10. Fry honey pancakes over medium heat on kefir with cheese on both sides until golden brown. Serve the tortillas with honey or any jam of your choice
