- Pitted cherry jam - 100 g

Step-by-step preparation of puff pastry bagels with cherry jam
1. Before preparing the puff pastry bagels with cherry jam, prepare the dough. We defrost it, put it on the table and roll out a layer 3-4 mm thick. If you make it thinner, then the mass may break during processing and not rise during baking, and if you make it thicker than 5 mm, then the bagels are more likely not to be baked completely. You need to roll it by moving with a rolling pin in one direction. It is unacceptable to first walk from left to right, and then back and forth, because this violates the structure of the mass, and all the charm of puff pastry can be lost. Next, we cut with a knife into square elements of the same size with a side of about 10 mm, and then we cut them in half diagonally to get triangles. To do this, we use the sharpest knife so that the edges do not wrinkle.
2. Let's start laying out the filling. We collect a small amount of jam and spread on the wide part of the triangles. If the jam is liquid enough, then you can pour a little starch under the filling, it will not let the ingredient spread. Or simply strain the excess juice through a sieve.
3. Next, we pick up the wide edge, at which the filling is located, and wrap it towards the far corner of the triangle. Do not press hard, so as not to compact the dough and prevent it from rising during baking. This is how neat blanks of puff bagels with cherry jam are obtained.
4. Spread parchment paper on a baking sheet. There is no need to lubricate it, because the dough contains a lot of oil and therefore does not burn. Sometimes it is advisable to lightly sprinkle the mold and preforms with water before placing them in the oven. This step will increase the moisture and soften the crust of the finished dessert. So, put each bagel in a baking dish.
5. Grease the surface of each piece with a beaten egg.
6. In order for the finished baked goods to have a lush structure, the oven must be preheated to at least 220 degrees. The maximum temperature is 250 degrees. This level of heat allows the butter in the puff pastry to boil quickly and lift each layer, creating thin crunchy layers. Bake the bagels for 15 to 20 minutes. Outwardly, they should increase in volume and brown a little. After that we take it out and cool it down.
7. Cherry jam puff bagels are ready! They can be served on a common dish or in portions, lightly sprinkled with powdered sugar.
