Eggplant is an amazing vegetable that can be called a chameleon. In different combinations, it, while leaving behind a unique taste, nevertheless becomes similar to meat, then to mushrooms, then to chicken. I propose to prepare a delicious salad that can decorate both the festive table and feed the family at an ordinary family dinner. To prepare it, you will need a little food: the eggplants themselves, onions and eggs. And I note that in this salad, eggplant tastes like mushrooms! I am sure that such a salad will not go unnoticed, and you will cook it quite often by popular demand.

Ingredients:
- Eggplant - 2 pcs.
- Bulb onions - 1-2 pcs.
- Carrots - 1 pc.
- Chicken eggs - 2-3 pcs.
- Table vinegar 6% - 2 tbsp. l.
- Salt, pepper - to taste
- Mayonnaise - 2-3 tbsp. l.
- Vegetable oil for frying

Wash the eggplants and cut them into small pieces. Sprinkle them generously with salt and leave the juice for 30 minutes to release the bitterness. By the way, for the salad it is necessary to choose small young eggplants, in which the seeds have not yet formed: the taste of such fruits is much softer.
Peel the onions, cut into half rings and scald with boiling water. After a couple of minutes, drain the water, and add vinegar to the onion and marinate it for 20 minutes.
Rinse and squeeze the eggplant slices. Fry them in vegetable oil, stirring so that all the pieces brown evenly.
Add the remaining ingredients to the fried eggplant: pickled onions, chopped boiled eggs and carrots, cut into thin strips or grated on a coarse grater.
Salt and pepper the salad to taste, season with mayonnaise.
Before serving, put the salad in the refrigerator for 20-30 minutes, so that all tastes and aromas are mixed, and the salad is slightly infused.
