Simita bagels are no less popular in Turkey than baklava. And in 2010, they were generally recognized as the most popular national Turkish baked goods. It is tender flesh on the inside and crispy outside topped with roasted sesame seeds. Traditional products are known to every tourist who has visited hotels in Turkey at least once. Birth with Simit begins every morning with honey, yoghurt, hot aromatic tea or coffee. These are not our usual custard bagels, but unsweetened buns made from bread dough. They can be cut in half lengthwise and put any filling inside. Moreover, it can be not only sweet, but also salty, for example, salted fish with cucumber and a leaf of lettuce.
In Turkey, simits are baked in a special stone oven, which complicates the process of repeating their cooking at home. But a detailed step-by-step recipe with a photo is as similar as possible to an authentic technology. Thanks to this, Turkish bagels are almost the same as genuine ones, ruddy, thin and crispy. Ingredients:
- Flour - 150 g
- Vegetable oil - 1, 5 tbsp. L
- Water - 75 ml for the dough, 100 ml for sprinkling
- Salt - 1 g
- Honey - 1 tsp
- Dry yeast - 0.5 tsp
- Sugar - 1 tsp
- White sesame seeds - 100 g
Step by step cooking Simit Turkish bagels, recipe with photo:
1. Pour half of the flour into a bowl, add sugar, salt, dry yeast and stir the ingredients.
2. In a bowl of flour, make a small depression in which to pour warm water.
3. Knead a soft dough and gradually add vegetable oil, which mix well into the dough.
4. Add the remaining flour and knead to an elastic, firm and tight dough.
5. Leave it in a warm place and cover it with a towel for 1 hour. During this time, it will double in volume.
6. Knead the dough that comes up and divide into equal four parts. Roll each of them into a thin bundle of the same thickness 80-100 cm long.
7. Fold the sausage in half and twist it spirally.
8. In Turkey, bagels are coated with pecmez before baking. It is thick as honey, a syrup made from boiled grape juice. But in our country there is no pecmez, so pour water at room temperature into a bowl, put honey and stir until it is completely dissolved.
9. Immerse the twisted rope of dough into the honey liquid.
10. Immediately move it to the sesame bowl and sprinkle well with the seeds.
11. Form into round bagels and place on a baking sheet lined with parchment paper. Leave the garments in a warm place for half an hour to fit. After that, send them to a preheated oven to 220 degrees for 15-20 minutes. Bake them until they are nice golden brown. Serve the bagels warm or chilled.
