Omelet is the most popular breakfast in the entire civilized world. It is used by children and adults. It is prepared simply, does not require special ingredients, it always turns out delicious. There are many types and options for preparing this wonderful dish: in a pan, in the oven, in the microwave, in water, milk, with cheese, onions, sausage, tomatoes … Any type of food is a great breakfast or a quick snack. Today we will cook an omelet with sausage, onion and cheese. This is a juicy egg dish that can completely replace a hearty breakfast or light dinner.
Despite the fact that this food is quite simple to execute, it also has its own subtleties and secrets. First, for a delicious crust, cook the eggs over low heat. Secondly, use the lid with a hole so that excess moisture evaporates during cooking. Third, if you want a more satisfying omelet, add flour to the egg mass. But you should not put a lot of it, otherwise the food will come out too dense. Fourthly, take any sausage: smoked, boiled, lightly smoked, or combine several types. Fifth, it is better to use cheese that melts well, although this is optional. Sixth, the omelet should be served immediately after cooking, while it is hot. It is not customary to cook it for the future.

Ingredients:
- Eggs - 2 pcs.
- Onions - 1 pc.
- Milk sausage - 100 g
- Cheese - 100 g
- Vegetable oil - for frying
- Salt - a pinch
Step by step preparation of an omelet with sausage, onion and cheese:
1. Peel the onions, rinse and pat dry with a paper towel. Use a sharp knife to chop it into half rings.
2. Remove the film from the sausage and cut it into medium wedges or cubes.
3. Place the eggs in a deep bowl and season with salt.
4. Beat the eggs with a fork until they break and become a homogeneous mass. It is not necessary to beat with a mixer, it is enough that they are only slightly mixed.
5. Pour vegetable oil into a frying pan and heat it up. Add chopped onion and sauté until transparent.
6. Then add the sausage and fry each piece over medium heat.
7. Turn the sausage slices over to the other side and pour the egg mass immediately. Swirl the pan to spread the egg mixture over the entire bottom area.
8. Put the cheese on top, which is cut into pieces or grate on a coarse grater. Cover the skillet with a lid and place it on the stove over low heat. Cook the omelet for about 7 minutes until the eggs coagulate. Do not overdo it on the stove for too long, otherwise it will dry out and lose its juiciness.
