- Eggplant - 2 pcs.
- Wheat flour - 3-4 tbsp. l.
- Breadcrumbs - 0.5 tbsp.
- Chicken eggs - 2 pcs.
- Salt, ground black pepper - to taste
- Fragrant herbs (Italian or Provencal)
- Vegetable oil for frying

Let's prepare the eggplant. We will wash them, clean and cut the stalks. Cut each eggplant lengthwise into plates about a finger thick, sprinkle each plate with salt and let sit for 15–20 minutes. After the eggplants are juiced, rinse them under running water to remove the bitterness and dry them with a paper towel.
Lightly beat each eggplant slice on both sides with a meat hammer. Do not overdo it: the flesh of the vegetable is quite soft, do not turn it into porridge.
Roll the broken pieces of eggplant in sifted wheat flour.
We dip in an egg chatter - beaten eggs with a little salt and pepper.
Immediately roll in breadcrumbs on all sides. Make sure the entire surface of the eggplant slices is covered in breadcrumbs. If desired, you can add aromatic herbs to the crackers, for example, a teaspoon of Provencal or Italian herbs and a pinch of ground paprika and turmeric for a rich color.
Pour vegetable oil into the pan, heat it well and fry the eggplants on both sides until golden brown. To get rid of excess fat, place ready-made chops on a paper towel.
