Mushrooms have always been present in Russian cuisine. However, in the summer season they were consumed fresh, and in the winter - in pickled, dried or salted. Currently, thanks to artificially bred champignons, mushrooms can be eaten all year round, and they have found great application in cooking. They are baked, boiled, fried, pickled, salted, dried and of course eaten raw. Plus, champignons go great with most foods and dressing sauces, making them a truly versatile ingredient.
Can mushrooms be eaten raw?
As folk wisdom says, "All mushrooms can be eaten, but some - only once in a lifetime." However, this expression does not apply to greenhouse mushrooms, like champignons and oyster mushrooms. That is, unlike forest mushrooms, champignons grow in ecologically favorable conditions, which makes them edible and even useful raw. Since the tissues of champignons are free of poisons and toxins, which are always present in forest mushrooms acquired from the soil. Therefore, using champignons, you will not receive any pesticides.
In addition, many biological active substances and vitamins are preserved in raw mushrooms that have not undergone heat treatment. In addition, the specially favorable conditions for their cultivation make them nutritious. Therefore, in order to eat them, an extremely small portion is needed - two to three times less than meat or fish.
The benefits of champignons
The usefulness of this type of mushroom is mainly confirmed by the huge amount of water contained in its structure (from 85% to 90%). And their composition is distinguished by the presence of many useful vitamins, carbohydrates and organic acids (mineral salts, vitamins PP, E, D, B, phosphorus, potassium, zinc and iron).
As for the calorie content of the mushroom, due to the large amount of proteins it contains, 100 g of mushrooms contains about 25 kcal. This fact allows it to be used for diets and healthy food menus.

Ingredients:
- Tomatoes - 2 pcs. medium size
- Cucumbers - 2 pcs. medium size
- Red sweet bell pepper - 1 pc. big size
- Champignons - 200 g
- White cabbage - 100 g
- Green onions - 2 feathers
- Garlic - 1 clove
- Soy sauce - 1 tablespoon
- Refined vegetable oil - 2 tablespoons
- Sauce "Tartar" - 1 tsp.
- Lemon - 0.5 pcs.
- Salt to taste
Cooking raw champignon salad
1. Wash and dry the cabbage. Cut the necessary part from the head of cabbage, chop it finely, season with salt and lightly crush with your hands. Then the cabbage will be more juicy.
2. Wash cucumbers, dry and cut into half rings.
3. Wash, dry and cut the tomatoes as shown in the photo.
4. Wash the bell peppers, remove the tail and seeds, and cut the pulp into strips.
5. Wash the mushrooms, dry and also cut into strips. You can peel the mushroom caps if you wish, although this is not necessary.
6. Wash green onions and chop finely.
7. Place all food in a salad bowl.
8. Now prepare the dressing sauce. To do this, pour refined vegetable oil, squeezed juice of half a lemon, soy sauce, Tartar sauce and salt into a saucepan. Mix everything well and season the salad just before serving it to the table. Since if you fill it right away and serve it after a while, then all the vegetables will juice up and the salad will turn out to be very watery.
