One of the most affordable and easy to prepare sauces is egg yolk sauce. In addition to the main ingredient, it is based on soy sauce and olive oil, and mustard gives piquancy and light pungency. Well, the boiled yolks themselves form the necessary thicker consistency and bright taste. This is the whole base of the sauce, and then the creative process begins. For example, taking into account personal taste preferences, you can add different spices and herbs, which will enhance the rich taste of the finished dish. In addition, you can put more pieces of finely chopped vegetables, then the sauce will look a little like the well-known Tartar sauce.
I prepared this sauce specifically for salad dressing, but it is perfect for vegetable dishes, and for meat or fish steaks, as well as poultry dishes. This dressing is much lighter and softer than harmful mayonnaise. Having cooked it once, it will become your everyday signature dish, which will often be present on your table. In addition, you can cook it in large quantities and store it at home in the refrigerator for 2-3 days. To do this, place it in a glass container with a tight-fitting lid.

- Mustard - 1 tsp
- Boiled chicken egg yolk - 1 pc.
- Olive oil - 2 tablespoons
- Soy sauce - 1 tsp

Step-by-step recipe for making egg yolk salad dressing:
1. First of all, boil the egg to a cool consistency. To do this, put it in cold water, boil it, reduce the flame and cook for 8 minutes. Then transfer to ice water and stand until completely cooled. You can change the water several times to keep it always cold. This will cool the egg faster. Next, peel it, cut it in half and remove the yolk, which is placed in a small saucepan. You don't need protein for the sauce, so you can use it for another dish. For example, put in a salad or appetizer that you will season with this sauce.
2. Using a fork, knead the yolk until soft and fluffy.
3. Pour olive oil over the yolk. If not, then use any other refined oil of your choice.
4. Stir the yolk with the oil until a smooth consistency is obtained.
5. Next, pour in the soy sauce. It will suit any, both classic and with different spicy flavors, for example, ginger or garlic. This will only make the sauce tastier.
6. Next, put a spoonful of mustard. You can use it smooth or grainy. You can also choose the sharpness of the mustard yourself. Season food with a pinch of salt.
