- Rooster - 1 pc.
- Allspice peas - 4 pcs.

- Salt - 2 pcs.
- Bay leaf - 3 pcs.
- Pork hoof - 1 pc.
- Celery root - 30 g
- Garlic - 3 pcs.
- Onions - 1 pc.
Step-by-step cooking of aspic in the form of a Pig for the New Year 2019, a recipe with a photo:
1. Scrape the pork hoof with an iron sponge to remove all tan, wash and fill with water.
2. After boiling, boil for 15 minutes. This is necessary so that all the dirt is boiled out of the hooves, especially the one located between the toes.
3. Rinse the hoof under running water and transfer to a clean saucepan in which you will cook the jellied meat.
4. Wash the cock and scrape the skin with an iron sponge to remove the black tan. Chop the rooster into chunks and place in a saucepan over the hoof.
5. Add all vegetables to the pot. Peel, wash and cut into large pieces of celery root and carrots. Peel the garlic completely, and remove all the husks from the onion, leaving only the bottom layer. It will give the dish a golden shade of jellied meat.
6. Fill the food with drinking water so that it covers the food 1-1.5 cm higher.
7. Place the pot on the stove and simmer over medium heat, uncovered. Make sure that no foam forms on the surface of the broth. And if it appears, then remove it immediately. Otherwise, it will give the broth a cloudy hue. After boiling, cook the jellied meat for 3-4 hours and season it with salt, black ground pepper, put allspice and bay leaf. Continue cooking the jellied meat for another 3 hours.
8. After this time, remove all meat and vegetables from the pan.
9. Go through the rooster, separating the meat from the bones, and cut into medium pieces.
10. Pick up a clean and dry plastic bottle with a volume of 0.5 ml to 1.5 liters and fill it with meat.
11. Strain the broth through a fine sieve to get rid of debris and pour it through a watering can into the bottle.
12. Close the bottle with a lid and refrigerate for 3 hours. Then, with a knife, carefully cut the bottom around the bottle and remove it. Carefully remove the jellied meat from the bottle (it will fall out easily) by immediately placing it on a serving dish. Decorate it in the shape of a pig by making a nickle, eyes, ears and a tail. The eyes can be shaped with allspice peas, olives or blue grapes, and the penny, ears and tail from milk sausage or boiled beets.
