The banana curd casserole is one of my favorite recipes, which I cook quite often. It can be baked not only with a banana, but also with peaches, strawberries and other berries. Today I stopped at a banana, tk. the combination of cottage cheese and banana seems to me the most successful.
To make the casserole really tasty, cook it with homemade cottage cheese. Then the product will be the most delicate and creamy. In addition, stale cottage cheese is suitable, which is already dangerous to eat on its own. Then it can be perfectly disposed of by preparing a delicious casserole for dinner.
I cooked pastries with semolina today. This makes it juicier and keeps its shape longer. But if you are used to cooking casseroles with flour, then use it. The proportion will remain the same. In this case, flour will be needed for the recipe if the cottage cheese is too liquid. It is also subtle: if you want a dessert with a uniform texture, grind the cottage cheese through a sieve. Love to feel the curd lumps in the product, then knead the dough with a tablespoon. In addition, I do not advise putting a lot of sugar in the dough, because from its excess, the product will acquire an unappetizing brown crust. Observing all these subtleties, you will get a tender casserole similar in consistency to an airy pudding.

Ingredients:
- Cottage cheese - 500 g
- Orange - 1 pc.
- Eggs - 2 pcs.
- Semolina - 2 tablespoons
- Banana - 1 pc.
- Sour cream - 1 tablespoon
- Sugar - 1 tablespoon
- Salt - a pinch
Step by step cooking banana curd casserole in the oven:
1. Place the curd in a bowl for kneading the dough. If you want to get a casserole with a uniform consistency, then grind it through a sieve or beat with a blender.
2. Add semolina, sugar and sour cream to the curd.
3. Stir and add the egg yolks. Place the whites in a clean, dry container free of fat and water. Stir again and leave the dough to stand for half an hour for the semolina to swell. Otherwise, it will grind on your teeth when finished.
4. Add the orange peel with pulp to the dough. Although if you don't really like the citrus taste, then you can limit yourself only to the zest. Mix well.
5. Peel the banana and cut into cubes or puree. Send to dough and stir.
6. Season the whites with a pinch of salt and beat with a mixer at high speed until light and white, stationary foam forms. Add them to the dough and stir in gently. Do this with the silicone spatula in one direction, preferably in an upward motion.
7. Grease a baking dish with butter and sprinkle with semolina. Pour the dough and smooth it out evenly.
8. Heat the oven to 180 degrees and bake the product for 45 minutes. Do not rush to remove the finished casserole from the mold, because when hot, it is very fragile and can break. Let it cool down to room temperature and then you can serve it to the table.
