Kutia for Christmas is one of the 12 traditional ritual dishes of the Christmas table. This is the main course with which the meal begins on Holy Eve. In simple terms, this dish can be called a sweet whole grain porridge. But usually it consists of 3 essential components: wheat, poppy and honey. However, depending on the region, it is prepared in different ways. For example, they are cooked from whole grains: wheat, rice, barley, pearl barley, whole oats. In addition to honey and poppy seeds, raisins, dried fruits, nuts, marmalade, compote are added … The grain of wheat, from which kutya is brewed, symbolizes eternal life, abundance and resurrection. Nuts are a symbol of prosperity, and honey is a prosperous life and health.
In our modern time, kutia for Christmas has become an integral part of the holiday, so all the hostesses have already learned how to cook it. The most traditional grain used as a base is pearl barley. Since in ordinary life for the daily menu, you rarely find it on the table. But on the eve of the holiday, this cereal in stores is just snapped up. Therefore, in this review I propose to cook kutya from pearl barley with poppy seeds, honey and dried fruits.

Ingredients:
- Pearl barley - 50 g
- Poppy - 20 g
- Dried apricots - zhmenya
- Sugar - optional to taste
- Honey - 2 tablespoons
1. Sort the pearl barley, wash and boil. There are several ways to cook it. For example, a quick option. Put the grains in boiling water, boil for 3 minutes and discard with a sieve. Rinse and place in a saucepan. Cover with cold water and cook until tender. A longer option is to soak the cereals for 4-5 hours. Then rinse, fill with clean water and boil.
2. Pour boiling water over the dried apricots and leave for 10 minutes to soak.
3. Then dry them with a paper towel and cut into small cubes.
4. Pour boiling water over the poppy seeds, stir, cover and leave for 10 minutes. Then drain the water and pour boiling water over again for 10 minutes. Do this procedure 3-4 times. This action is necessary for the poppy to steam out and increase in volume. Then twist it in a meat grinder or grind it in a mortar.
5. Put the prepared pearl barley into a bowl.
6. Add dried apricots to it.
7. Next, lay out the poppy seeds.
8. And add honey.
9. Stir well and you can serve Christmas kutya to the table. It is usually served chilled.
