Of course, such lean pastries will not be rich, but they are fragrant, light, tender, juicy, and not at all troublesome to prepare. At the same time, the final result will definitely please! You can use any berries, both fresh and frozen. This time I baked products with cherries. However, you can take absolutely any filling. Filling: apricots, blueberries, apples, nuts, dried fruits, etc. Serving such balls is very tasty with cold juice, hot coffee or tea.
By the way, you can knead the dough in a large portion. Use half for baking right away, and hide the rest in the freezer. And then, when you just need to defrost the workpiece and bake delicious cookies. Also, the dough can be kept in the refrigerator wrapped in plastic wrap for several days. It keeps well. - Flour - 160 g
- Cucumber pickle - 7 tablespoons
- Cherry juice - 3 tablespoons
- Baking soda - 0.5 tsp
- Odorless vegetable oil - 7 tablespoons
- Vegetable oil - 7 tablespoons
- Cocoa powder - 1 tablespoon
- Salt - a pinch
- Cherries - 20 berries
- Sugar - 7 tablespoons or to taste
Step by step preparation of lean balls of rye flour with berries, recipe with photo:
1. Pour cherry juice and cucumber pickle into a bowl for kneading dough.
2. Next, pour in the vegetable oil and mix the liquid ingredients.
3. Add sugar and mix the food again.
4. Pour in the cocoa powder.
5. Next add flour and baking soda. I recommend sifting the flour through a fine sieve. This will enrich it with oxygen and the baked goods will be more tender.
6. Start kneading the dough first with a spoon.
7. Then finish mixing with your hands. When the dough becomes elastic and does not stick to the sides of the dishes and hands, add the cherries to it. They should be pitted. Therefore, remove them first.
8. Form the dough into small balls a little smaller than a walnut and place on a baking tray.
9. Dip each ball in powdered sugar and place on a baking sheet.
10. During baking, the balls will expand in volume and a “cracked” effect will appear.
11. Heat the oven to 180 degrees and send the baking sheet to bake for 10-15 minutes. Do not hold for longer, otherwise dry the balls too much.
12. Cool the finished product and serve in the dessert table with your favorite drinks.
